Ingrédients :

– 3 eggs
– 80g caster sugar
– 1/2 sachet of CULINAT organic vanilla sugar
– 80g flour
– 30g CULINAT organic icing sugar
– Optional : 1 teaspoon of red food colouring (CULINAT Organic colouring powder). You can also leave them plain or flavour them: perhaps with raspberry, lemon or orange blossom

Meltingly soft and spongy, it’s the ideal biscuit for children!

 

Sponge fingers are dry, soft, elongated biscuits sprinkled with icing sugar. They are used to make desserts such as charlottes and tiramisus.

Préparation :

Whisk the egg whites until they form soft peaks, before they become too firm, add the sugar and beat to obtain a firm texture.

Whisk the egg yolks and gently add them to the egg whites and the natural colouring powder.

Gently mix the whites, yolks and sifted flour with a rubber spatula.

On a baking sheet, form the cookies using a pastry bag.

Sprinkle with icing sugar before putting in the oven for 20 minutes at 160°C.

Allow to cool before storing in a small metal box.
