Organic pistachio and raspberry financiers

Ingrédients :

100g organic sugar
60g organic flour
80g CULINAT organic almond powder
1/2 teaspoon CULINAT organic baking powder
4 organic egg whites
70g organic butter
2 tablespoons organic pistachio purée
Fresh organic raspberries

These soft little cakes made from almond powder are very easy and simple to make. It can be infinitely varied with flavourings, fresh fruit, dried fruit, chocolate, and more ! Here we offer you a gourmet recipe for pistachio and raspberry financiers !

Préparation :

To start, cook butter in a saucepan over medium heat until browned.

Mix the flour with the almonds, sugar and baking powder, add the raspberry flavouring. Stir in the egg whites and whisk to obtain a smooth, silky dough.

Finally, add the browned butter and then the pistachio purée.
Put this dough in a bowl and store it in a cool place for at least 1 hour.

Preheat the oven to 180°C
Pour the financier dough into silicone moulds. Place the raspberries in the oven for 10 minutes.

Before tasting, let the financiers cool for 5 minutes.
