Preparing the cream :
Using a whisk, whip the whipped cream into a pre-cooled container.
Whisk the egg yolks and sugar until the mixture whitens, add the mascarpone and organic raspberry flavouring.
Gently mix the 2 mixtures. Set aside in a cool place.
Presentation :
Put some cream at the bottom of the shot-glasses. Add crumbled biscuits, raspberries and a layer of cream. Repeat the process up to at the desired height. Finish with a layer of cream.
Set aside in a cool place for 1 hour.
Serve well chilled, enjoy !
